Harvest: Manual, in the first ten days of August.

 

Vinification: Cooling of the harvested grapes through the use of a cold room. Loading of whole bunches not de-stemmed into the press, soft pressing in total absence of oxygen. Subsequent fermentation with stable temperature at 12 ° C.

Sparkling process: Medium Charmat, with very slow second fermentation through inoculation of selected yeasts.

Aging: In autoclave, contact with stirring yeast for 45 days.

Color: pale bright straw yellow.

Perlage: Very fine and continuous, excellent persistence in the glass.

Bouquet: Fine and elegant, with floral notes of wildflowers that evolve into fruity aromas of plum and white peach.

Taste: Savory and creamy, it reveals the same aromatic notes perceived on the nose. Balanced and persistent finish.
