Vinification: Cooling of the harvested grapes through the use of a cold room. Loading of whole bunches not de-stemmed into the press, soft pressing in total absence of oxygen. Subsequent fermentation with stable temperature at 12 ° C.
Sparkling process: Medium Charmat, with very slow second fermentation through inoculation of selected yeasts.
Aging: In autoclave, contact with stirring yeast for 45 days.
Color: pale bright straw yellow.
Perlage: Very fine and continuous, excellent persistence in the glass.
Bouquet: Delicate and fine, with initial floral notes that evolve into light aromas of yellow-fleshed fruit.
Taste: Creamy and intriguing, with flavor and acidity that blend well with the aroma felt on the nose. Soft, engaging finish with good persistence.
