Vinification: Cooling of the harvested grapes through the use of cold rooms. Loading of whole bunches not de-stemmed into the press, soft pressing in the total absence of oxygen and 2-hour maceration. Subsequent fermentation with stable temperature 12 ° C.

Sparkling process: Medium Charmat, with very slow second fermentation through inoculation of selected yeasts.

Aging: In autoclave, contact with stirring yeast for 45 days.

Color: Bright pale pink.

Perlage: Very fine and continuous, excellent persistence in the glass.

Bouquet: Particularly inviting, with delicate floral notes of rose hips that blend with nuances of strawberry and currant.

Taste: Creamy, fresh, savory. Drink fluid and engaging. Excellent gustative persistence.
